Recently, Ramen Mob launched their newest menu known as ‘Carbonara Mazesoba’ a.k.a. Carbonara Ramen.

‘Creamy carbonara but with thick Japanese ramen.’

Ramen Mob’s Carbonara Mazesoba is a brothless type of ramen called mazesoba, characterised by its thick noodles and various flavourful sauces and toppings. The fusion dish combines the creaminess of Italian carbonara with the umami punch of Japanese ramen.

Ramen Mob’s signature chewy noodles serve as the ‘pasta’, while the very-carbonara-like sauce is actually a combination of Ramen Mob’s signature tonkotsu broth and in-house gourmet cheese, resulting in a sauce that’s extra sinful.

Even though seaweed and tobiko (flying fish roe) are added as staple mazesoba flavours, the classic crispy pork bacon bits and solitary golden egg yolk drive home the fact that this, in essence, is a carbonara dish.

Our verdict? Don’t knock it until you try it! Devout cheese lovers will be floored by this dish (they put A LOT of cheese in the sauce), but some may be turned off by its strong pork-y taste due to the generous portions of crispy bacon and reduced tonkotsu broth as the base. However, the Carbonara Mazesoba isn’t as “fusion-y” or intimidating as it sounds – honestly, it tastes a lot like carbonara, just with more chewy ‘pasta’.

But overall, Ramen Mob succeeded in marrying the best of Italian comfort food and Japanese umami with the Carbonara Mazesoba. If you like your food creamy and cheesy, then this dish can be worth trying. Pro tip: make sure to mix well before slurping for the full flavour experience.
