Located in Singapore’s Esplanade Mall, Labyrinth serves some of the most unique, experimental dishes out there, earning it one Michelin star just a couple of months ago.
Labyrinth is known for putting their own spin on local dishes, and they’re plated beautifully, too! Here are just some of the intriguing dishes they serve:
1. Chilli crab ice cream
One of the dishes that caught the attention of Malaysians and Singaporeans alike is their eyebrow-raising chilli crab ice cream.
The ice cream is made up of a cold, creamy chilli crab paste, and tastes sour and spicy all at the same time! Served alongside sweet steamed buns and deep fried soft shell crab, topped with Keng Eng Kee’s signature Chilli Crab sauce, this unique dish is sure to stir the senses!
2. Meringue teh tarik
Yeah, we know this dessert looks like kaya toast, but it’s so much more than that! The “toast” slices are actually toasted meringues with teh tarik mousse sandwiched between them. Woah!
3. Cendol xiao long bao
This is certainly a different take on the traditionally savoury xiao long bao! Served along with gula melaka syrup in a small vinegar pot, this dessert will definitely confuse your taste buds (in a totally amazing way!).
4. Cristal De Chine Caviar with Kaya and Caramelised Toast
Wah, the chef must really love kaya toast! Chef Han, who owns Labrynth, described the dish to The Peak, saying, “The caviar replicates the flavour of salted butter whilst the kaya ice cream is made from raw gula jawa sourced from Indonesia. The toast is sourced from Sin Hon Loong Bakery in Whampoa and the dish is finished with a soya-sauce cured egg yolk sauce.”
Sounds delicious!
5. Siew Yoke Umami Rice
This Chinese-Japanese fusion dish is definitely not one to miss, either! With some deliciously juicy and crispy siew yoke served alongside some rice mixed with furikake (Japanese seasoning) and seaweed, this is sure to get your mouth watering!
