With an array of Sakura-inspired flavours woven within this innovative Omakase experience, the Hanami Omakase Menu will be available from 15 April to 5 May 2024, promising an adventure of blossoming flavours unlike any other in Kuala Lumpur.
1. Let your taste buds blossom
“The Hanami Festival is a deeply cherished time in Japan, and we are thrilled to bring the essence of this beautiful season to our guests through our Hanami Omakase Menu. This menu is a labour of love from our talented chefs, who have meticulously curated each dish to capture the season’s spirit.
I am incredibly proud of their dedication and creativity in crafting this innovative menu. I hope that our guests will feel the same, and join us in celebrating this joyous festival with this exquisite menu,” said Chef Philip Leong, Head Chef of Nobu Kuala Lumpur.
Chef Renante Dominguez, Head Sushi Chef of Nobu Kuala Lumpur, added, “This year’s Hanami Festival marks my first celebration of this beautiful tradition with our Nobu KL guests. It is a truly special occasion, and I am thrilled to present a Sakura-inspired menu that is unlike anything I have seen before. The beauty of the cherry blossoms and the spirit of Hanami have inspired my team and I to create dishes that not only showcase the delicate flavours of spring but also push the boundaries of traditional Japanese cuisine.”
2. The tastes of sakura season~
The Sawara Calamansi Ponzu dish is a delightful opening to the Hanami Omakase Menu, featuring slices of the freshest, most tender Sawara fish; it is complemented by a refreshingly tangy Calamansi Ponzu sauce and Ginger Tomato Salsa. A light sprinkle of Sakura-themed Salt brings a subtle floral note to the appetiser, as well as a pop of colour to its overall presentation.
Salmon Tataki Raspberry Citrus
Next comes the Salmon Tataki Raspberry Citrus; a complex dish packed with fresh and innovative flavour combinations. Slices of melt-in-your-mouth Salmon are paired with a sweet Raspberry Citrus sauce and earthy Baby Spinach before being topped with fiery Tosa Pepper Oil and umami-rich Smoked Ikura and Hana Kezuri Kombu – making for a near-perfect dish that hits every flavour profile imaginable.
For the hot dishes, the Hotaru Ika Taro Puffs are a playful and inventive dish that combines crispy puffs filled with Firefly Squid and Taro. The light and crispy puffs sit atop a bed of creamy Soramame Puree, topped with luxurious fresh Caviar and Scallop Floss.
The menu’s show-stopper is the Chargrilled Wagyu, featuring perfectly seared Wagyu beef with a silky Beetroot Sakura Sauce that truly encapsulates the flavours of Hanami.
For the cherry on top of an inventive dining experience is the Sakura Sphere – a celebration of Spring flavours with its Sakura Tea Granite and Strawberry ‘Caviar’, and the perfect crescendo to a memorable Omakase experience.
